Onions are low in calories yet add abundant flavor to a wide variety of foods. With only 45 calories per serving, onions are fat and cholesterol free, very low in sodium, high in vitamin C, and a good source of fiber and other key nutrients.
Higher intakes of fruits and vegetables have been associated with a variety of health benefits. Research shows that onions may help guard against many chronic diseases. That's probably because onions contain generous amounts of a flavonoid called quercetin. Other sources are tea and apples, but research shows that absorption of quercetin from onions is twice that from tea and more than three times that from apples. Studies have shown that quercetin protects against cataracts, cardiovascular disease, and cancer.
In addition, onions contain a variety of other naturally occurring chemicals known as organosulfur compounds that have been linked to lowering blood pressure and cholesterol levels.
Eggs - 4
Onion - 1 small
Spring onion - 2 tsp(finely chopped)
Curry Leaves - 4-5
Okra - 8-10(optional)
Sesame seeds/Nuvvula powder - 1/2 tsp
Peanut(pallilu) powder - 1tsp(add according to taste)
Coriander powder - 1tsp
Garlic - 3 pods
Tamarind - according to taste
Methi powder - a pinch
Oil - 3tsp
Turmeric - a pinch
1.Soak tamarind in hot water or if you are in a hurry here is a tip .Add water & tamarind in a microwave safe bowl and microwave it for 1 min to extract the pulp easily.
2.Boil eggs ,remove the shell .With the help of a sharp knife /tooth pick or fork pierce the egg so that the egg will absorb the pulusu and tastes good.
3.Cut onions lengthwise ,spring onion,okra,cilantro and keep them aside.
4.Heat oil in a deep saute pan or vessel ,add jeera ,onion ,chopped garlic,curry leaves .Cook them until the onions are soft , I like the onion taste in pulusu so I don't fry them till they are brown .Add turmeric ,mix it.
5.Add chopped okra ,salt , red chili powder saute it for 5 min.Cover the pan and cook okra until they are 40% done on low heat.
6.Extract the tamarind pulp and keep it aside.
6.Add methi powder,peanut powder(adding peanut powder gives a nice flavor),sesame powder,coriander powder and mix everything , open cook for 5 min add eggs .
7.Add the tamarind pulp to the pan and add 2 cups of water.Allow it to boil for 10 min check the seasoning add if anything is required.If you want your pulusu to be watery then add little more water if required , add chopped cilantro ,boil it for 15 min.
8.Pulusu is ready to serve , Pulusu goes really well with pappu , i love the combination.
Can be served with hot steamed rice .
