By now you must be wondering what is this . I had the same expression when my mom-in-law said she is going to prepare Biranji.Well,it is basically a flavorful spicy rice dish. This is very easy to prepare and it tastes delicious .
We had friends for dinner and athamma prepared her special dishes birnaji & egg shorva everybody just loved the food .Thanks to athamma for sharing this special spicy dish with me.
Oil - 2tsp
Rice - 2 cups
Garlic - 4 pods
Onion - 1 small
Red chili powder - 1tsp
Salt 3/4 tsp (Add according to taste)
Cinnamon stick - 1/4 piece
Ginger garlic paste -1/4 tsp(optional)
Scallion/spring onion - 3tbsp finely chopped (optional)
Cilantro/coriander - 3 tbsp finely chopped
Cloves - 2
Cardamom - 1
Garam masala - 1/4tsp(optional)
Note : This dish is supposed to be soft so athamma prefers pressure cooker , if you are comfortable open cooking please go ahead.
1.Wash & soak the rice for 30 min.
2.Grind garlic,cardamom,clove,cinnamon into paste and keep it aside.
3.Chop onion(as shown in pic),tomato,cilantro,spring onion and you can add any greens of your choice. I added approximately 1 cup spinach.
4.Switch on the heat and once the cooker/pan is hot add oil .
5.Once the oil is hot add the ground masala mixture ,keep stiring do not burn garlic .
6.Add onion cook them for 5 min add ginger garlic paste . Once the raw smell of ginger is gone add tomato,spinach,cilantro,spring onion,salt,red chili powder and mix it cook the mixture for 5-8 min on medium flame,
7.Add water to the mixture , I used 4 cups of water for 2 cups of rice .Check for the seasoning and add if anything is required.
8.When water starts boiling add rice , cover it with a lid if you are using cooker then cook it on medium heat for 1-2 whistles (if you like the rice to be soggy then you can wait for 3 whistle I prefer 2).Turn off the heat , and leave the cooker or pan on the stove until it cools down.
9.Once the cooker cools down the rice is ready to serve.
