Aloo Parata

Aloo parata , this is my dad's all time favorite .Dad and me would order either uthappam or aloo parata when we ate out. Thanks to vahrehvah chef ,he is too good cook .I saw his video and started preparing . When my dad visited me I made parata's for him and he loved them !!!!
Paratas can me made with many stuffing's and today i prepared Aloo parata for shirish's lunch , here comes the recipe.

This recipe makes 5-6 paratas.
Ingredients :

Wheat flour/Aata - 1 1/2 cup
Water - 1/2 cup
Salt - a pinch (optional)

For stuffing:
Aloo-3 medium
Red chili powder -1/4 tsp(add according to taste)
Salt - 1/4 tsp(add according to taste)
Spring onion/onion -1/2 tsp very finely chopped
Oil/ghee - 4 tsp
Garam masala -1/4 tsp(optional)
lemon juice -1/4 tsp
Green chili - 1(depends on spice level , i did not use)
Cumin/coriander powder - 1/4 tsp
Cilantro/coriander - 2tsp

Method:
To prepare the dough:
1.Take a wide bowl and add1 cup aata/flour ,salt and mix properly . Then add water (I use diluted warm milk) little by little and mix the aata.
2.The dough should be soft for fluffy paratas/rotis the dough needs to be kneaded well.
3.Cover the dough and keep it aside for sometime at least 30 min.
To prepare stuffing:
1.Take a bowl add the mashed aloo(pressure cooked aloo),chili powder,salt,lemon,onion/spring onion,garam masala,cumin/coriander powder mix it well and keep it aside.
Parata's:
1.Knead the dough once again and divide the dough into pieces , make a ball and press it slightly with fingers.
2.Take the mashed aloo mixture and make similar sized balls as dough patties and keep them aside.
3.With the help of rolling pin roll the dough patties into 3 inch diameter circle ,take the aloo mixture and keep it in the center of the circle and take it into your hand , carefully close all the sides and make a ball.
4.Repeat the process and stuff all the balls and keep them aside for about 5 min.
5.Mean while take a pan/skillet set it on medium high.
6.Keep dry wheat flour in a cup . Lightly press the ball on the sealed side and keep it on the topside when rolling.Roll the wheat balls in the dry flour and roll them carefully with the help of rolling pin , make 6 inch circle and after the pan is hot add some oil and put the parata on the pan/skillet.
7.Flip the parata and you should be able to see brown spots on it.Cook on other side,once its done keep it aside in a plate/aluminum foil.
8.Repeat the process until all the paratas are done and serve them hot .
9.If you want to freeze them for future use, wait until all the paratas are cold and keep them in zip lock bag and freeze it. You can heat them once again when ever you are hungry.



Can be served with raita/curd & pickle/curry of your choice.

Sometime i make the filling and freeze them they are most simple yet delicious one to make!
